THE INDIAN EGG SCRAMBLE- anda bhurji!

We Indians do everything in our own way, we have a version of the scrambled egg of ours as well. whether you be a Maharashtrian, Gujarati, South Indian, Bengali, Punjabi, Bihari whatever, everybody in India knows what Egg Bhurji is.
this version of ours is totally mouth-watering and inviting.
Normally, Indians have Anda Bhurji with parathas, mango pickle and hot ginger tea (Adrak Vali Chai).
this smells good and tastes really good.
let's check it out-
INGREDIENTS-
- two eggs
- one onion julienne slice
- one green chilly
- half tbsp dried red chilly powder
- one tbsp turmeric powder
- one small tomato chopped finely
- oil
- one handful of coriander finely chopped
- salt
- throw the julienne sliced onion in sizzling oil.
- let the onions caramelized a bit, not totally, throw green chopped fresh chilly in it.
- unlike all the Indians, I like a little crunch in the vegetables, eating soft vegetables is no fun.
- add salt, turmeric, red chilly powder to it.
- mix well.
- add all the juicy chopped tomatoes to it.
- cook well.
- crack both the eggs in it.
- stir, till the eggs are totally cooked.
- enjoy, with hot desi ghee paratha's, mango pickle and a cup of hot adrak vali chai.
